Description
From the warm slopes of Bonastre, in the Baix Penedès, comes Sicus Sons Cartoixà, a radical and honest expression of the territory, created by Eduard Pié, a rebellious oenologist and defender of a viticulture inseparable from the landscape. His philosophy admits no shortcuts: minimum intervention, maximum identity. His winery is not a closed temple, but the vineyard itself, where everything essential takes place. With Cartoixà (the local name for Xarel.lo), Eduard seeks to capture the pulse of the land without adornment, without artifice.
The wine comes from the 23-year-old "La Caseta" vineyard, located at an altitude of 210 metres above sea level and barely 6 kilometres from the Mediterranean. Here, the soil is loamy, of calcareous origin, with good drainage and basic pH, which provides freshness, structure and a very marked salinity. This coastal environment, with constant breezes and intense light, gives the grapes a vibrant, deep, maritime character.
Winemaking
The grapes are harvested by hand at the exact point of ripeness. The grapes enter whole -without destemming- directly into clay amphorae buried in the vineyard itself. There, Sicus Sons Cartoixà ferments and infuses slowly for three months, in contact with skins, pips and stems. This ancestral and silent process allows the wine to breathe the earth from within, in a stable environment, without external intervention.
At the end of December, the amphora is opened and only the liquid part is extracted, without pressing. This deliberate gesture results in a clean, pure, natural wine, without any make-up. Sicus Sons Cartoixà then rests in the cellar for a further four months before bottling. The result: a wine with a low alcoholic content, but with a depth and character that overflows its lightness.
Taste
Sicus Sons Cartoixà is an almost meditative sensory experience. On the nose, it offers delicate aromas of dry camomile, fennel, citrus peel, sourdough bread and slight hints of yeast. On the palate, it is creamy but sharp, with a lively acidity that contrasts with its unctuous texture. Notes of dried white fruit, raw almonds and a saline background evoking the nearby sea. The finish is long, with an elegant bitterness and a lingering minerality.
