The eponymous red 2022 Ponce was produced with 80% Bobal from granite soils and 20% Moravia Agria from limestone and clay. It fermented with 100% full clusters in open-top 4,500-liter oak vats and finished fermenting and aging in a single 7,000-liter oak vat for 11 months. It has 13% alcohol and a pH of 3.6 with 5.7 grams of acidity. This has something in common with the La Estrecha from this same vintage, with a more ethereal profile, both with changes in the élevage toward larger volumes that give the wines more relaxed, less tight personalities. Complete, balanced and harmonious from very early on, this is a great vintage for this wine. 7,000 bottles were filled in September 2023.

Description

Ponce wine is an exquisite expression of the Manchuela region, standing out for its unique composition and winemaking methods. This wine, created by winemaker Juan Antonio Ponce, is a blend of 85% Bobal and 15% Moravia Agria, varieties that give the product a distinctive identity.
The vineyards of La Ensancha in Villanueva de la Jara, more than 60 years old, are the grapes for this wine. They are divided into sections, withgranitic and pebble soils for the Bobal, and calcareous for the Moravia Agria. This specific terroir contributes significantly to the characteristics of the wine.

Winemaking

In terms of viticulture, a biodynamic approach is practised, with no soil enrichment or irrigation. Cover crops are maintained and frequent ploughing of the soil is avoided, thus preserving its structure. This respect for the land is reflected in the quality and taste of the wine.
Vinification is done with whole bunches, and the grapes are trodden by foot before fermenting in 4,500 litre oak vats with indigenous yeasts. The wine then matures for 17 months in 600-litre French oak barrels and is bottled without fining or filtering, with minimal addition of sulphur. This process guarantees a wine of high quality and authentic character.

Taste

Ponce is a wine that combines elegance and complexity. It has red fruit flavours with a hint of black pepper, an iron-like character and a saline, chalky finish. Its flavour profile is rounded, with a blend of rustic and elegant notes, and a long, savoury finish.
