Description
Pet Nat Pedecastello Elevare was born in the heart of Veneto, specifically in the picturesque village of Marzabotto. This masterpiece is the fruit of the effort and passion of Alex della Vecchia, a young and intrepid vigneron who, inspired by the philosophy of his master Ernesto Cattel, decided to embark on the production of organic and nature-friendly wines.
Winemaking
Pedecastello Elevare is made exclusively from the highest quality Pinot Noir grapes, selected only in the best vintages. These grapes have their roots in a terroir of alluvial origin, influenced by the proximity of the Piave river and characterised by layers of clay and calcareous rocks. The vineyards are located in the commune of San Donà del Piave, at about 600 metres above sea level. Alex has adopted a low environmental impact production approach, based on organic and biodynamic farming principles. Both in the vineyard and in the winery, everything is done by hand, avoiding aggressive interventions or the use of chemicals. The grapes for Elevare are harvested by hand and fermented naturally with indigenous yeasts present on the skins. After a short maceration of about 12 hours, the wine ferments again in the bottle with the addition of frozen must.
Taste
Pedecastello Elevare has a colour resulting from the short maceration of the skins. On the nose, it displays aromas of red berries, almonds, wild flowers and a subtle balsamic note. On the palate, this wine surprises with its freshness and salinity, leaving a lingering sensation on the finish. It is ideal with vegetable dishes, vegetarian recipes, smoked oily fish and fresh cheeses.
