Description
Pazo Señorans Tras los Muros was born from the desire of Berta García - trained in legendary houses such as Latour and Haut-Brion - to create an Albariño that would break the mould. Back in Galicia, she found a unique vineyard within the walls of the pazo itself. Hence the name: Tras los Muros, made exclusively from grapes grown within the walled enclosure of the Pazo. Granitic soils, humid Atlantic climate, sea breezes and a vineyard cared for with minimal intervention are the pillars of this wine. The objective: to capture the purest essence of Albariño without artifice.
Winemaking
The production of Pazo Señorans Tras los Muros begins with a manual harvest in small boxes, followed by a rigorous selection and minimal intervention in the winery. Fermentation is carried out in oak barrels (225 to 500 L), where the wine remains for 6 months on its lees, with gentle bâtonnage. The aim is not volume or power, but texture, tension and complexity. Before bottling, a minimum dose of sulphites is added.
Taste
Pazo Señorans Tras Los Muros is taut, lean and deeply mineral. On the nose, it displays layers of citrus (lime, grapefruit peel), green apple, pear and a subtle note of ripe peach. The oak ageing does not intrude: just a hint of vanilla and cream, perfectly integrated. The palate is sharp, with a vibrant acidity that supports the whole. Saline touches, hints of wet stone and a creamy texture that comes from its ageing on lees. Long finish, with echoes of fennel, lemon and lingering salinity. It is not a fruity or complacent Albariño. It is serious, elegant and Atlantic. Perfect for those looking for depth, longevity and a white that speaks of the soil in which it was born.
