To speak of Pazo Señorans is to speak of history, patience and a deep respect for the Albariño grape. This winery, located in the heart of the Salnés Valley, in the heart of the Rías Baixas, has perfected the art of capturing the soul of the Atlantic in every bottle. It is no coincidence that, since 1979, this 16th century estate has become an undisputed benchmark of the appellation.
Pazo Señorans Albariño Colección is the testimony of how time transforms a young and vibrant wine into something deeper, with more nuances, without losing its freshness. Made from 100% hand-selected Albariño grapes from vineyards with decomposed granite and sandy soils -its hallmark-, this wine shows the greatness of a grape that, well worked, can defy the years.
Winemaking
The winemaking process of Pazo Señorans Albariño Colección is a true exercise in precision and respect for the grape. Each bunch is harvested by hand and quickly taken to the winery, where it is gently pressed. Fermentation is carried out in stainless steel tanks at a controlled temperature in order to preserve all its fruity expression. But here comes the secret: after fermentation, the wine rests on its lees for at least five months, gaining texture and complexity. Afterwards, Pazo Señorans Albariño Colección is bottled and left to mature for a further 30 months before being released on the market.
