Disgorged in July 2024 without dosage, Parmantier’s 2019 Blanc de Blancs Les Spectres is sourced from a south- and southeast-facing Chardonnay parcel in Chamery planted in 1980. It delivers an aromatic palette of ripe pear, warm brioche and dried flowers notes. Full-bodied, enveloping and textural, the wine reveals a rich core of fruit and ripe acids, concluding with an expansive finish. Six grams per liter of residual sugar and a final alcohol of 13.5% lends it a more charming, demonstrative style.

Free-run fermented with indigenous yeasts and aged in 400-litre French oak barrels. Second fermentation in bottle with a minimum ageing of 54 months. Disgorged by hand and bottled unfined, unfiltered, with no added sulphites and no final dosage (Brut Nature).
