Description
Panevino Axina'e Ixinau wine represents the authentic region of Sardinia. This red wine stands out for being a blend of local varieties, known in the local dialect "Nurri" as "grapes of the neighbourhood". This denomination refers to the fact that the grapes used for its production are conferred by its neighbours. For years, Gianfranco Manca, the winemaker behind this wine, has tried to involve the vineyard's neighbours in agricultural practices that align with his vision of viticulture.
Winemaking
The wine fully reflects Gianfranco Manca's idea, where "man's energy" is the main component in the wine. The grapes are local indigenous varieties and the wine has an alcohol content of 14%. In terms of winemaking and ageing, all Panevino wines are fermented in open wooden vats and then racked into old barrels where they are aged for 12 months.
Taste
Panevino Axina'e Ixinau is a powerful and structured wine: a wine that can be enjoyed immediately, but if left to age for a few years in the cellar, it can offer unique emotions. It is excellent with cured meats and cheeses, and goes perfectly with baked pork knuckle and first courses with meat sauce. As for its flavour notes, one can identify flavours of blackcurrant and dried herbs, with hints of cherries. It is bold and structured, with medium acidity and a medium to long finish.
