The original unfortified white Ovni was produced in Montilla Moriles with Pedro Ximénez grapes, but as they also bottle a version from Palomino from Sanlúcar, we need to specify more in the name, so what I tasted should be called 2017 Ovni Pedro Ximénez. The wine tries to showcase the pure character of the grape on the chalky albariza soils of Montilla. It was bottled after a very weak aging under flor. It has the structure of Pedro Ximénez, and the year was also very warm and had a tendency to produce powerful wines. It also has more effect from the yeasts (one-third of the volume had flor), and it's also one year older than the Palomino version I tasted next to it. 6,000 bottles produced.
