The next bottling after the number 93 is the NV La Bota de Manzanilla 113, which has strong green olive and brine aromas, but it's going for a fresher style and profile, austere and dry and still aged seven years or so under flor. The palate is super dry and long. This is the follow-up to edition 93 that started this new path of more freshness and drinkability but respecting the authenticity of the wines. This is a bit tight, possibly because of the recent bottling. 5,000 bottles produced. It was bottled in June 2022.

La Bota de Manzanilla 113 is the tenth edition of this line signed by Equipo Navazos, a collective that has spent almost two decades redefining the way we understand the fortified wines of the Marco de Jerez. With an archaeological approach to wine, Eduardo Ojeda - an oenologist with the soul of a seeker - has been rescuing forgotten butts in Sanlúcar wineries, guided by a single principle: to bottle only the exceptional. The idea for this manzanilla arose from the desire to return to the origin, to that austere, saline and pungent profile that defines the most classic and least domesticated manzanilla. Thus, La Bota de Manzanilla 113 is made from the same soleras that gave life to editions nº 71 and nº 93, marked by long ageing and an unmistakable personality.

Eduardo Ojeda and his team meticulously select from among several dozen casks and barrels set aside over the years. In Ojeda's own words, "there are wines that comply, but say nothing; we want those that have something to say". In this selection, each butt expresses different nuances within the same Sanlúcar melody. The average age of the wine is around seven years, which gives it a maturity rarely found in a commercial manzanilla. The Atlantic climate, the breezes of the Guadalquivir and the albariza soils provide the perfect setting for a biological ageing process that evolves with wisdom and character.

Winemaking

La Bota de Manzanilla 113 is aged entirely in Sanlúcar de Barrameda, under a veil of flor in the traditional system of criaderas and soleras. The selection includes butts where the flor begins to weaken, allowing the wine to acquire a deeper, almost philosophical profile. The average ageing of seven years is evident in every layer of the wine. Bottling is done with a barely perceptible filtering, in order to preserve its authenticity and the sensory profile it offers straight from the butt.

Taste

The colour of La Bota de Manzanilla 113 is golden yellow, with greenish reflections and a visually dense texture. On the nose, this manzanilla is complex and evocative: sea salt, bitter almond, dried flower, sourdough bread and a touch of iodine. On the palate, it is dry, firm and structured, with a masterful balance between saltiness, freshness and elegant bitterness. Its long, almost infinite finish leaves a trail of dried fruits, minerality and hints of the Atlantic.

More than a wine, La Bota de Manzanilla 113 is a declaration of intent: a deep, uncompromising manzanilla, designed for purists and best enjoyed with time, air... and respect.
