Description
Giovanni Rosso Barolo is a clear representative of the terroir of Serralunga d'Alba, in the heart of Piedmont. Made from 100% Nebbiolo grape variety, it comes from vineyards located at altitudes between 260 and 380 metres above sea level, with different exposures to the sun.
Winemaking
The grapes are harvested by hand in October, ensuring a precise selection of the grapes. As for vinification, fermentation takes place in concrete tanks for approximately 25 days, with daily pumping over and a"délestage" technique in the middle of the process to improve the extraction of tannins. Ageing varies between 18 and 36 months, depending on the vintage, and takes place in large 50-hectolitre French oak barrels, which allows for controlled and harmonious ageing.
Taste
On the palate, Giovanni Rosso Barolo offers an elegant and structured experience. The tannins are well integrated, providing a fine and delicate texture, while the medium-high acidity adds freshness and liveliness. Predominant aromas include red fruits such as cherry and raspberry, with hints of liquorice and tobacco adding depth. The finish is long and persistent, with an evolution in the glass that makes it perfect to cellar and enjoy over time. It is an ideal wine to pair with fresh pasta dishes, red meats and grilled fish with sauces.
