Description
From the moment Jean-François Ginglinger decided to reclaim the Ginglinger Bihl parcel, he knew that this hillside with its complex limestone soils would give him a different wine. On the label, he is seen examining a rock with a magnifying glass: an image that sums up his philosophy. The Ginglinger Bihl cuvée was born as an unusual blend of Riesling and Sylvaner, seeking a balance between tension and rusticity. The vines, between 35 and 45 years old, are planted on a geological mix of hard limestone and marl that gives this wine its marked mineral identity. Alsace is a land of contrasts and this plot proves it: moderate sun exposure, cool climate and a biodynamic tradition of minimal intervention that allows the grapes to express without artifice what the land dictates.
Winemaking
Harvesting at Ginglinger Bihl is meticulous and manual. Each variety is vinified separately: gentle pressing, spontaneous fermentation with indigenous yeasts and ageing in stainless steel on fine lees. There is no fining or aggressive filtration. Some vintages are even made without adding sulphur dioxide. The final blend seeks to respect both the precision of the Riesling and the elegant rusticity of the Sylvaner. Short but precise ageing allows Ginglinger Bihl to retain its freshness and purity.
Taste
Ginglinger Bihl is a long, lively wine. On the nose, it presents itself with crisp citrus fruit: lemon, lime, fresh grapefruit. There are also notes of green apple, fine yeast and a distinctly stony background, with echoes of crushed rock and saltiness. The palate is dry, with firm acidity and medium structure. The texture is reminiscent of gypsum: firm but delicate. The Sylvaner adds a subtle vegetal note that rounds off the sharp acidity of the Riesling. The finish is long, mineral, with echoes of chalk and fresh herbs. Ideal for those who are looking for wines with a sharp profile, marked terroir and great gastronomic capacity. An unadorned white, pure and precise, which feels like a breath of fresh air on hot stone.
