The entry-level red 2023 No Sin Tout Tsefs was produced using the three red grapes, 40% Pinot Noir, 40% Poulsard and 20% Trousseau. The blend is different each year, with the idea to make an easy wine with a moderate 12% alcohol. It is fresher and cooler, straightforward and with fine tannins. 30,000 bottles were produced.

Description
The Fumey-Chatelain winery was born out of Raphaël Fumey and Adeline Chatelain's commitment to the most authentic Jura. Their project began almost by chance after the devastating frost of 1991: with hardly any grapes to sell, they decided to vinify what little was left. Thus was born a philosophy of minimal intervention and maximum respect for the terroir. Today, their son Marin, trained in New World vineyards, brings freshness to a deeply rooted family tradition. Fumey Chatelain No Sin Tou Tsefs is a vibrant blend of Pinot Noir (40%), Trousseau (40%) and Ploussard (20%) from vines planted between 1954 and 2002 on marl, limestone and clay soils around Montigny and Arbois. The viticulture is certified organic, with Guyot-Poussard pruning and low yields (40 hL/ha), which guarantees concentration without losing freshness.
Winemaking
The production of Fumey Chatelain No Sin Tou Tsefs begins with a manual harvest, where 60% of the grapes are destemmed before undergoing a gentle maceration of 20 days with indigenous yeasts. Fermentation is carried out in stainless steel tanks, favouring a subtle extraction, almost like an infusion of skins. The wine is then aged for 10 months in a combination of foudres and used barrels, without fining or filtering before bottling, thus preserving its purity, tension and natural character.
Flavour
Fumey Chatelain No Sin Tou Tsefs has a fresh, light and deeply expressive profile. On the nose, crisp red fruits - raspberry, cherry and redcurrant - stand out, accompanied by floral notes and a delicate mineral background. The palate is juicy, with fine tannins and a lively acidity that gives it verticality. There are hints of white pepper, dried leaves and wet stone, with a long, saline and subtly spicy finish. Fumey Chatelain No Sin Tou Tsefs does not seek to impose itself, but to insinuate itself: an authentic Jura, with a clean, airy and deeply digestible expression.
