Description

The story of François Carillon Saint-Aubin 1er Cru Pitangeret Rouge stems from the vision of François Carillon, heir to a long winemaking tradition in Puligny Montrachet, who decided to show the more delicate and subtle side of Saint-Aubin. In a steep corner of Les Pitangerets, where reddish clay predominates on a chalky base, he planted Pinot Noir in a terroir typically reserved for Chardonnay. It was a risky but revealing decision. The vines, more than 35 years old, are planted on steep slopes and poor soils that force the vines to dig deep, to make an effort. This effort translates into concentration and finesse. Here, in this cool corner of the Côte de Beaune, where the alpine breezes moderate the temperatures and lengthen the ripening process, Carillon produces a red wine of authentic, sober and refined expression.

Winemaking

The grapes that give life to François Carillon Saint Aubin 1er Cru Pitangeret Rouge are harvested by hand and vinified in a cellar separate from the whites of the domaine. The work is minimal and intuitive: light destemming, fermentation in stainless steel, gentle extraction, and subtle ageing in oak barrels (with little new wood), designed to respect the fruit and the character of the terroir. The result is a light wine, with a broad mid-palate and a silky texture that makes it particularly accessible in its youth.

Taste

From the glass, François Carillon Saint Aubin 1er Cru Pitangeret Rouge displays aromas of ripe cherry, wild raspberry and redcurrant, accompanied by a discreet spicy touch: clove, white pepper, perhaps a whisper of black tea. The palate is agile, with fine tannins and lively acidity supporting its structure. There is a tactile -not residual- sweetness that envelops the palate, and a long finish where the chalky minerality that anchors it to its origin emerges. Elegant, fresh and precise, François Carillon Saint Aubin 1er Cru Pitangeret Rouge is an ode to Burgundian subtlety, ideal for roast poultry, sautéed mushrooms or an autumnal evening of contemplation.
