In the heart of Jerez, between walls steeped in history and ageing, Fernando de Castilla keeps one of its oldest secrets: Fernando de Castilla Solera Único. This brandy does not follow easy paths or modern shortcuts. It is born of a firm conviction: to rescue the purest soul of wine through artisanal distillation and prolonged ageing. There is no hurry here. The fine, aromatic still holandas are distilled slowly, as they used to be, to preserve all their nobility. Its creator, Jan Pettersen, defines it as a tribute to time: "We only bottle when silence knows more than we do".
After distillation, the eau-de-vie begins its long dormancy in American oak casks that have aged fortified wines for decades. First, a static and prolonged ageing of more than 40 years, something exceptional even among the great brandies of Jerez. Then, a gradual integration into the soleras and criaderas system, where the brandy is refined until it reaches an impeccable balance.

Taste
Dark mahogany in colour, with amber highlights, Fernando de Castilla Solera Único has a dry, very intense and fragrant nose. Notes of old wood, dry vanilla, blond tobacco, sweet spices and a background of tanned leather. On the palate, enveloping, deeply smooth, with hints of toast, a saline touch and a very long finish. A complex and meditative brandy that asks for time and silence.
Ideal with dark chocolates or a Havana cigar, this brandy is a work of resistance to oblivion, a liquid testimony to the soul of Jerez.
