From the heart of Jerez, where the Atlantic winds brush against albariza soils, Fernando de Castilla Vermouth was born, created by the Bodega Rey Fernando de Castilla. The idea was as audacious as it was natural: to revive an ancient Jerez tradition and elevate it with the know-how of fortified wine. The base: a noble blend of dry oloroso ( 70 %) and Pedro Ximénez (30 %), aged by the criaderas and soleras system, which is then infused with a selection of 27 botanicals. It is a vermouth that does not hide in sweetness or extravagance: its character lies in the structured elegance of Jerez, with the complexity of spices and an almost classical balance. It is said that at a first tasting, someone exclaimed: "This tastes like bottled Christmas! -and they were right.
Winemaking
The base wine of Fernando de Castilla Vermouth is made from Palomino and Pedro Ximénez, fermented in steel to preserve freshness. Afterwards, the Oloroso and PX are matured in oak casks until they reach the optimum point of oxidative ageing. Afterwards, a cold maceration is carried out with the botanicals - absinthe, clove, orange peel, cinnamon, cardamom, among others - for three months in used Jerez casks. The result is a signature vermouth, faithful to the soul of Jerez wine but with an enveloping aromatic twist.
Flavour
On the nose, Fernando de Castilla Vermouth displays notes of walnut, dried citrus peel, figs and sweet spices. The palate is unctuous, warm, with a honeyed sweetness that is balanced by the elegant bitterness of absinthe and notes of old wood. The finish is long, slightly saline, and leaves a memory of raisined fruits and Mediterranean herbs. Perfect on its own, on the rocks, or as a base for a cocktail with depth.
