In the heart of the Marco de Jerez, Casa Castillo decided to pay tribute to the very essence of time with a brandy that seeks authenticity, not artifice. Thus was born Fernando de Castilla Solera Gran Reserva Oloroso Viejo, the result of a courageous decision: to rescue old soleras aged in Oloroso casks to create a brandy that not only breathes Jerez, but embodies it. The project, led by a team obsessed with detail and respect for craftsmanship, uses exclusively Palomino Fino wine spirits. A neutral variety in its origin, but transforming in patient hands. The warm climate, the easterly wind and the albariza soils give an unmistakable signature of origin: concentration, salinity, oxidative elegance.
Winemaking
The distillation of Fernando de Castilla Solera Gran Reserva Oloroso Viejo is carried out at low temperature, preserving the most delicate fractions of the base wine. Subsequently, the eaux-de-vie are aged for 10 to 15 years under the traditional criaderas and solera system. The casks - made of American oak - have previously contained dry Oloroso, which gives the distillate a rich aroma and a deep character. No caramel or sugar is added: the dark amber colour and aromas come exclusively from time and wood. It is a naked brandy, with no make-up.
Taste
On the nose, Fernando de Castilla Solera Gran Reserva Oloroso Viejo shows complexity and finesse: notes of nutmeg, blond tobacco, sultanas and a distant memory of aged leather. The influence of the Jerez wine is noticeable in every layer, with echoes of toasted hazelnut, noble varnish and a balsamic whisper.
On the palate, it is enveloping, warm and persistent. The entry is smooth, with a silky texture that gives way to flavours of dried fig, toasted caramel and natural vanilla. The alcohol -perfectly integrated- does not burn, but elevates. The finish is long, dry, with echoes of old wood and a discreet salinity that recalls its Andalusian origin.
