Description

Clos Kixhaya Pet by Nat is an ancestral method sparkling wine made in the Loire region. This wine is the result of the passionate work of Beatrice Papamija and Étienne Le Blanc. Both are in their third year of organic conversion, but work beyond the minimum requirements for organic and biodynamic certification. Biodiversity is the priority in their vineyard, promoting life as much as possible and disturbing as little as possible.

Winemaking

Clos Kixhaya Pet by Nat is a reflection of their commitment to quality and nature. The Cabernet Franc grapes are harvested just as they reach maturity. They are harvested by hand and pressed in a basket for four hours. Fermentation takes place in stainless steel tanks until the residual sugar drops to 20 grams. It is then bottled and allowed to continue fermentation slowly. This particular batch rested on the lees for a year before disgorging, with no additions.

Taste

Clos Kixhaya Pet by Nat is noted for its red fruit, biscuit and peach flavours. Those who have had the pleasure of tasting it describe it as spectacular, especially for Cabernet Franc fans. Its familiar texture and velvety smoothness on the palate are beautifully complemented by its fine bubbles. Its pink colour is very attractive, and it surprises with its soft tannins, something unusual in a Pet Nat.
