Description
Chavost Côteaux Champenois Blanc 2020, is a champagne made exclusively from Chardonnay grapes by the Chavost winery in France.
Chardonnay is possibly the best known grape in the world. This grape variety comes from vineyards cultivated with sustainable agriculture techniques on clay and limestone soils.
Winemaking
Harvesting is done by hand and takes place at the optimum ripening point of the grapes. Intervention in the winery is minimal. Vinification is carried out in temperature-controlled stainless steel tanks.
Alcoholic fermentation is spontaneous with indigenous yeasts. Malolactic fermentation is also spontaneous with indigenous bacteria.
Subsequently, it was transferred to the bottle and aged for approximately 18 months in used oak barrels. Once ready, it is not clarified before bottling, it is not acidified or deacidified.
Taste
Chavost Côteaux Champenois Blanc is a champagne with very fine fruity, citrus and mineral aromas. In the mouth, it is light, fresh, elegant and complex, with a moderate acidity, medium body, and finally, the finish is pleasant chalky aromas. It is perfect for all French champagne lovers!
