Description
Cascina Degli Ulivi Montemarino is a wine that invites introspection and discovery. It represents the essence of natural and biodynamic winemaking, a philosophy that has been faithfully followed by Stefano Bellotti, the creator behind this exceptional wine.
Montemarino is made from the white Cortese grape variety, and comes from the Montemarino vineyard, as its name suggests, located on top of one of the highest hills in Gavi. This vineyard is cultivated following biodynamic practices, which guarantees a production that respects the environment and the very essence of the grape. The soil in which it grows is clay-limestone, with a full southern exposure and benefiting from the sea winds. Harvesting takes place between the end of September and the beginning of October, and the grapes are picked by hand in small 20 kg crates.
Winemaking
No skin maceration is carried out and fermentation starts within 24 hours of the grapes entering the winery. Autochthonous yeasts are used and malolactic fermentation is carried out. It is important to note that no sulphites are added to the wine, making it a natural and pure choice for wine lovers.
Taste
Montemarino is characterised by a rich, complex and spicy wine. It represents the stimulating and direct character of the Cortese grape, with ripe fruit aromas. Its flavour evolves with time, offering a pleasant smoothness, especially after 2 or 3 years. Stefano Bellotti describes this wine as the "mysterious feminine soul", a wine that invites introspection and does not reveal all its secrets at the first tasting.
