Description
In the heart of the Jura, Berthet Bondet Bondet cultivates a philosophy that embraces the rigour of the terroir and the authenticity of its indigenous vines. Ever since Chantal and Jean decided to rescue an abandoned estate in the 1980s, their commitment has been clear: to work with absolute respect for the land, avoiding shortcuts. Today, their daughter Hélène is continuing the work with conviction, opting for certified organic viticulture, manual tillage and controlled weeding. Savagnin, the region's emblematic grape variety, is grown on Jurassic sands, cold, clayey soils that give the wine tension and depth. The result: Berthet Bondet Côtes du Jura Savagnin, a cuvée that defies convention and makes no concessions to immediacy.
Winemaking
After the grapes are harvested by hand, the bunches are pressed whole. Fermentation takes place in stainless steel tanks to preserve the natural freshness of the grapes. Berthet Bondet Côtes du Jura Savagnin is then aged for three years in 228-litre oak barrels, without refilling (oxidative ageing under yeast veil). This method, typical of the Jura, brings aromatic complexity and an unmistakable structure, far removed from the conventional fruit profile. Minimal intervention and prolonged ageing allow the Savagnin to clearly express its mineral and saline character.
Taste
Aromatically, Berthet Bondet Côtes du Jura Savagnin displays a restrained but profound range: candied citrus, green apple, fresh walnut and an echo of bitter almond. The palate is dry, vibrant, marked by firm acidity and a slightly unctuous texture. The minerality dominates: saline notes, wet stone, lemon peel and a very subtle spicy background. The finish is long, precise, with hints of dried fruit and a touch of toast. This is not a wine for those looking for immediate roundness, but for those who appreciate elegant austerity and pure expression of terroir. It goes well with cured Comté, smoked fish or dishes with mushrooms and cream. It can be kept for up to 30 years.
