Description
The world of champagne is vast and full of nuances, and among its jewels we find Champagne André Beaufort Polisy Rosé Brut. This exquisite champagne comes from the dipartimento dell'Aube, specifically from the Côte des Bars. The grapes used for its production are Pinot Noir and Chardonnay, which are grown on clay soils cultivated under organic practices. These vineyards not only benefit from homeopathic products, but aromatherapy is also used to care for them.
Winemaking
The production of this champagne is meticulous and traditional. After a manual harvest, the grapes are pressed and the must is left to decant for 12 hours in specific containers. Spontaneous fermentation is carried out by parcels in steel tanks and wooden barrels. To avoid the excessive use of sulphites, malolactic fermentation is carried out spontaneously at Beaufort.

André Beaufort's Champagne Brut Rosé Polisy is characterised by its harmony, clarity and elegance, making it a true signature champagne. Its rosé colour comes from the maceration of the Pinot Noir skins with the must, a process that takes no more than twelve hours. On tasting, one can perceive olfactory notes of red fruits and orange. On the palate, it stands out for its marked acidity and persistent bubbles, making it a unique sensory experience.
