In the rolling landscapes of the Ribera del Duero, following the course of the majestic Duero River, lies Dehesa de los Canónigos, a winery that holds in every corner more than two centuries of history and tradition. This place is not just a winery, it is a true refuge where land and passion intertwine, where the love of wine has been passed down like a family treasure, generation after generation. Located in Pesquera de Duero, this winery embraces the hills that outline the landscape and envelops us in an atmosphere that seems to tell us secrets of the past.

It all began in the 19th century, when the property was part of the Cabildo of Valladolid Cathedral. It was then that the history of the vineyard began in these lands, creating a deep bond between cultivation and spirituality. And then, in 1931, the Sanchiz family took over, falling in love with every corner of the estate. Since then, they have cared for this land with devotion. Today, Iván Sanchiz leads the project, with one foot firmly rooted in tradition and the other venturing towards innovation. It is exciting to see how the winery maintains its essence, but also evolves, ensuring that the magic of Ribera del Duero remains alive and in constant transformation.

Vineyards

The Dehesa de los Canónigos vineyards are spread over 70 hectares that look like a real garden designed by nature for the cultivation of vines. Each plot has its own personality, and walking through them is like meeting up with old friends, each with its own memories and experiences, each with its own history and character. The microclimate of Ribera del Duero, with its marked thermal oscillations between day and night, gives the grapes that special touch, a ripening that combines freshness and concentration of flavours. Here, Tempranillo (or Tinta Fina), Cabernet Sauvignon and Albillo Mayor are cultivated with care, and each brings something unique to our wines.
The terroir is a fascinating mix of clay-limestone soils, with a layer of gravels that act as a natural drainage system, perfect for keeping the roots healthy and strong. And then there is the climate: cold winters, hot summers... a real challenge that, in the end, makes the grapes grow stronger and give their best. But what excites us most about the winery is its commitment to sustainability. Here, viticulture is not just an agricultural activity, it is almost a ritual, a dance with nature. They use respectful techniques that prioritise biodiversity and care for the vitality of the soil, ensuring that each year, the harvest is a true reflection of the environment in which it is born.

There is no hurry here, only the determination to pick the grapes at their exact point of ripeness, ensuring that each one brings the best of itself. Afterwards, the grapes are destemmed and fermentation begins, where every detail counts: temperature, time... everything is designed to preserve those wonderful fruity aromas and freshness that characterise our wines. Then, the wine rests in American and French oak barrels, where the magic happens: it acquires complexity, elegance, and those spicy notes, with subtle hints of vanilla and cocoa that invite you to close your eyes and enjoy the experience.
