Description

Deep in Sisán, in the heart of Ribadumia, there is a small granite paradise: Pago El Balado. There are just two plots of Albariño, surrounded by a stone wall that gives its name to the wine - "Balo", in Galician, means just that: wall. Like a Burgundian "clos", this natural boundary encloses not only 70-year-old vines planted on ungrafted rootstock, but also a philosophy of craftsmanship and deep respect for the identity of the place. Replanted in 1950, Zárate Balado faces south, on a scarce granitic soil, poor in organic matter and loaded with mineral history. It is here that Eulogio Pomares -the restless soul and brilliant mind behind the new era of Zárate-makes a radical decision: to let the vineyard speak for itself, without make-up or distractions, thus creating one of the purest, longest-lived and textural whites in the entire Rías Baixas DO.

Winemaking

The grapes are harvested by hand and carefully selected in the vineyard. The grapes are destemmed and subjected to a long, gentle pressing, extracting a must with a very low yield but of the highest quality. After a light racking, spontaneous fermentation takes place in stainless steel tanks. There is no malolactic fermentation or batonnage. Instead, Zárate Balado first rests for three months on thick lees, which gives it a fat, dense, almost chewy texture, and then for a further six months on fine lees, refining its aromatic expression with surgical precision. This balance between volume and definition is what makes Zárate Balado a rarity: a wine of steel, but with the soul of a great white wine for ageing.

Taste

On the nose, Zárate Balado is initially restrained, like all great wines that do not seek to dazzle but to dialogue. With air, intense notes of white fruit, ripe citrus, lime peel and a background of wild herbs emerge. But it is always the minerality that rules: an almost tactile salinity, like wet stone in the sun. The palate is full-bodied, creamy without being heavy, oily without losing tension. The acidity - very high and precise - structures the wine and projects it towards a long, dry finish, where the essence of Galician granite resurfaces. There are no concessions to the easy or the immediate: it is a wine that needs air, time and attention. A white wine for ageing, with the potential to evolve for 5 to 10 years, which reflects the soul of Val do Salnés like few others.

Zárate Balado is not a fashionable wine; it is a classic under construction. A jewel enclosed within granite walls.
