Description
Vincent Charlot Le Fruit de ma Passion Extra Brut is an exciting champagne produced only in sunny and warm years.
This champagne is composed of approximately 55% Pinot Meunier, while the remaining 45% is an almost equal proportion of Chardonnay and Pinot Noir. These grapes come exclusively from two plots, La Genette and La Chapotte, both located in Mardeuil and certified organic and biodynamic. These vineyards, with a size of 0.55 hectares each, have limestone-clay, clay, flint and chalk soils, creating an exceptional terroir for growing grapes.
Winemaking
The grapes are harvested by hand, destemmed and gently pressed. Spontaneous fermentation with indigenous yeasts takes place in neutral toasted French oak barrels. For this cuvée the wine does not undergo malolactic fermentation. The wine then matures in the same barrels for approximately 9-11 months. Finally, it is bottled with liqueur de tirage and aged on the lees for 42 months for secondary fermentation. During the final stage of disgorgement, the dosage is 4g/l, classifying it as Extra Brut.
