Description
Vincent Charlot L'Extravagant Extra Brut is an exclusive and limited annual production that is born from two of Vincent's best plots, creating a wine that can be either rosé or white, depending on the year. Only approximately 600 bottles are produced each year, and they are bottled at a low dosage (maximum 3.5g/l).
Winemaking
Vincent Charlot L'Extravagant Extra Brut is a blend of 95% Chardonnay and 5% Pinot Noir, sourced from Les Basses Ronces in Mardeuil and Clos des Futies in Epernay, both in a vineyard where the subsoil is pure chalk.
The grapes are harvested by hand, destemmed and gently pressed in order to obtain the most elegant musts. The must ferments spontaneously in neutral French oak barrels and does not undergo malolactic fermentation. The wine then ages in the same barrels on fine lees for approximately 11 months. Finally, it is bottled with the liqueur de tirage and aged on the lees for at least 36 months for the second fermentation. The final dosage during disgorgement is 2.5g/l (Extra Brut).
No sulphur is added throughout the vinification process.
