Description
UBE El Reventón is a wine that encapsulates the essence and tradition of Jerez, meticulously expressed by the Cota 45 winery under the oenological vision of Ramiro Ibáñez. This wine is a pure representation of the Listán(Palomino Fino) variety, grown exclusively on the El Reventón estate, which is located on a west-facing hillside near the Guadalquivir River in Sanlúcar de Barrameda, Cádiz, Andalusia. The 15 years of age of the vines and their location at about 80 metres above sea level on Tosca Cerrada Albarizas soils, add a distinctive character to the wine.
Winemaking
The elaboration of UBE El Reventón follows traditional methods, with a manual harvest and whole cluster pressing in old barrels where the must ferments spontaneously without temperature control. This first fermentation gives way to an ageing process of 9 months in the same barrels, where it develops an initial veil of flor that lasts for several months. Subsequently, the wine undergoes oxidative ageing for a further 6 and a half months, which enriches its complexity.
Taste
When tasting UBE El Reventón, one discovers a wine with medium acidity and a dry character. It exhibits a straw yellow colour and a marked tear in the glass, indicative of its structure. On the nose, it presents a medium expressiveness with typical Palomino Fino notes and a lactic touch, adding layers of aromatic complexity. On the palate, the wine is unctuous and medium-bodied, highlighting dried fruit flavours and soft fruity nuances, complemented by a subtle saline note reflecting its proximity to the Guadalquivir River. This combination of elements makes UBE El Reventón a well-structured and balanced wine, although some experts suggest that more complex options could be found. Its good entry and persistence on the palate make this wine a remarkable option in its category.
