Description

Thymiopoulos Xinomavro Jeunes Vignes is a red wine of Greek origin that belongs to the P.D.O. Naoussa category. This wine stands out for being made from the 100% Xinomavro variety, a grape indigenous to Greece, which gives it unique and distinctive characteristics.
The wine comes from vineyards located at altitudes varying between 200 and 500 metres. These vineyards are located in two specific areas: around the higher altitude village of Fytia and in the lower elevation plots near the village of Trilofos. It is important to note that the vines are young and are not artificially irrigated. The soil in which the vines grow is a combination of schist, granite and limestone. The microclimate of the Naoussa region is of a warm continental type, with moderate rainfall throughout the year. In addition, the cool winds from the Vermio mountain play a crucial role in the quality of the grapes.

Winemaking

The grapes are harvested by hand between the end of September and the beginning of October. 75% of these grapes are de-stemmed and then macerated for a period of 12 to 15 days. Fermentation takes place in stainless steel tanks for 3 months. Subsequently, the wine matures for 8 months in cement tanks.

Taste

Thymiopoulos Xinomavro Jeunes Vignes is a wine with a young profile that stands out for its fruity and herbal nuances, which makes it unique. It has good tension and an interesting structure despite being light-bodied. Its notes are predominantly vegetal, with hints of red fruit, white berries, menthol, pepper, tomato and dried fruit. Its acidity is very marked, which gives it a great freshness. However, it is important to mention that the presence of alcohol is noticeable, which can influence its perception. It is a wine that pairs perfectly with dishes such as duck confit accompanied by potatoes.
