Description
In the small village of Fytia, on the slopes of Mount Vermio, a single plot of ungrafted Xinomavro - planted more than 50 years ago on schist and granite soils - has given birth to one of Apostolos Thymiopoulos ' most personal wines: Thymiopoulos Aftorizo. The name, which can be translated as "authorised by oneself", is almost a declaration of principles. This wine is born without compromise, as an act of complete trust in the land, the variety and the time.
At 450 metres above sea level, the warm days and cool nights during ripening give the bunches of grapes a natural tension, while the constant winds of the Vermio aerate the vines, ensuring impeccable health. The result is a wine where freshness and elegance come straight from the vineyard.
Winemaking
The grapes are harvested by hand. In the case of Thymiopoulos Aftorizo, 60% is destemmed while the rest is fermented whole with indigenous yeasts, favouring a pure and vibrant expression of Xinomavro. Maceration is extended for 20 days, followed by 12 months of ageing in 500-litre French second-use barrels, which provide structure without dominating the fruit.
Taste
Thymiopoulos Aftorizo displays a restrained but profound nose: black cherry, raspberry, dried leaves, mild spices and that unmistakable hint of dried tomato so typical of Xinomavro. The palate is vertical, with firm but polished tannins and a precise acidity that sets the pace. Ripe red fruit mingles with earthy notes and a sharp, almost saline minerality. The finish is long, dry, with an austere elegance that faithfully reflects the altitude, the soil and the spirit of the wine. An essential, honest red wine for those seeking character without artifice.
