Description
Thymiopoulos Kayafas is a red wine made by Apostolos Thymiopoulos with the Xinomavro variety in the region of Naoussa, Greece. It comes from a vineyard of the same name, planted almost fifty years ago near the village of Trilofos, in the Macedonian region. This wine, with Protected Designation of Origin (P.D.O. Naoussa), is 100% Xinomavro, a variety indigenous to northern Greece. The vines are located at an altitude of 180 metres above sea level on calcareous soils. The microclimate is influenced by Mediterranean winds and air from the Vermio mountains, providing a considerable temperature variation between day and night.
Elaboration
The grapes are harvested in September and 80% of the grapes are destemmed. Fermentation is carried out with indigenous yeasts and maceration lasts 40 days. Subsequently, the wine is matured for 12 months in second-use 500-litre French oak barrels. This controlled vinification and ageing process allows Thymiopoulos Kayafas to develop unique and refined characteristics.
Taste
Thymiopoulos Kayafas stands out for its unique sensory profile. On the nose, it presents floral and fragrant aromas, reminiscent to some extent of Nebbiolo, with a low robe and remarkable aromatic complexity. On the palate, it is texturally similar to Tempranillo, offering a tasting experience that combines balanced acidity and soft tannins. Xinomavro, when handled with precision, results in wines that are a delight to the senses, moving away from the more tannic and bitter profiles that can arise from improper management of this variety.
