Description
In Chamery, in the Petite Montagne de Reims, Thomas Perseval Premier Cru Grande Cuvée was born of a conviction: Premier Cru Champagne is not "made", it is interpreted. Thomas Perseval learned early on that the bubble is a consequence, not an objective; the essential is in the chalk, the cold and the light of the vineyard. His winery is small and, for that very reason, every decision weighs heavily. Since 2012, he has been committed to certified organic viticulture, even if in Champagne this means taking risks and giving up easy kilos. There is an anecdote that defines him: in an early harvest, with the pressure of the calendar and the neighbours already cutting, he preferred to wait a few more hours -and lose part of the harvest due to a passing rain- rather than pick grapes without the right amount of energy. That quiet bravery is the philosophy behind Thomas Perseval Premier Cru Grande Cuvée, a no-make-up portrait of Chamery. The blend is deliberately classic and precise: equal parts Pinot Noir, Pinot Meunier and Chardonnay. Here, on chalky soils and in a northern climate, tradition is expressed with restrained fruit and a mineral tension that sets the pace.
Winemaking
In Thomas Perseval Premier Cru Grande Cuvée, the grapes go in with the idea of not forcing aromas. It is fermented with indigenous yeasts and the ageing is carried out 100% in barrels, mostly used, seeking micro-oxygenation and texture, not wood flavour. Malolactic fermentation takes place naturally and the wine rests on leesfor around11 months. It is not clarified or filtered, in order to preserve the fine line of the vineyard. After tirage, it rests for a long time in the bottle: at least 36 months on the lees before disgorging. The style aims for purism: Brut Nature (zero or almost zero dosage), so that the chalk remains in the foreground.
Taste
In Thomas Perseval Premier Cru Grande Cuvée, the nose starts off serious, more "stone cold" than pastry: lemon, grapefruit, crisp apple, and a hint of toast with air, without becoming sweet. Lively and ample on the palate: precise, fine-grained bubbles that seek direction rather than spectacle. The acidity draws a citrus line that sharpens the palate and, underneath, the chalky, clean, saline mineral column appears. The fruit remains muted - pear, green apple, a faint flash of red - while the creamy texture underpins the whole. Long, dry finish, with echoes of chalk and a freshness that begs for seafood, fish and, perhaps why not, another sip.
