Description

Shaya Habis was born as an exercise in radical respect for tradition and old vines. In the heart of Rueda, the Shaya winery found in the old Verdejo vines -planted in goblet-trained vines on poor, sandy soils- the raw material to create a wine that goes far beyond the typical profile of the appellation. These vines, which are over 80 years old, have survived the passage of time between harsh winters and arid summers, bearing scarce but intense fruit. The philosophy behind Shaya Habis is clear: minimum intervention, maximum expression. It is committed to a complex, deep and mature Verdejo, capable of reflecting the mineral soul of its origin and resisting the commercial mould that is often imposed on this variety.

Winemaking

The grapes are harvested early in the morning to preserve the aromatic freshness. The grapes, exclusively from old bush vines, are fermented in large 500 and 600 litre French oak barrels, a format that allows for subtle oxygenation and prevents the wood from dominating. Shaya Habis spends eight months on its fine lees, without excessive bâtonnage, which provides a creamy texture and remarkable aromatic complexity. The whole process seeks balance and depth, avoiding artifice.

Taste

In the glass, Shaya Habis is a bright greenish-gold. The nose is rich and precise: ripe peach, apricot, citrus peel, white flowers, subtle smoky notes and a clearly mineral background. The palate is full, serious and elegant. The fruit is present, but not dominant: it merges with toasty, saline and herbal touches. The acidity is firm, sharp but well integrated, providing tension and freshness. The finish is persistent, with hints of grapefruit, wet stone and faint smoke. It is a white wine that demands attention, closer to a great Burgundy than a conventional white from Rueda. Ideal for those who are looking for a Verdejo with depth, without make-up, that speaks of the land without needing to raise its voice.
