The golden-yellow colored NV Grand Cru Le Mesnil sur Oger Diapason displays a deep, intense yet fresh, fine and complex bouquet of great elegance and terroir expression with chalk and citrus notes. Vinified 45% in small oak barrels, this is an intense, fresh and elegant grand cru, and the finish is intense and perfectly ripe but still precise, refined and delicately salty. This is a truly smart assemblage of two contrasting vintages (2008 and 2009) that takes the best of both to compose something new and complete. It's an excellent cuvée indeed. Bottled in April 2010 and disgorged as Extra Brut on December 12th, 2017. Tasted April 2018.

Description

Pascal Doquet Diapason Grand Cru Extra Brut is a champagne made exclusively from Chardonnay grapes sourced from Grand Cru vineyards located in Le Mesnil-sur-Oger, in the prestigious Côte des Blancs region. The producer, Pascal Doquet, is known for following organic viticulture practices, dedicating special care to the quality and sustainability of his vineyards. This champagne is a Blanc de Blancs that reflects the purity and elegance of the terroir, with a biodynamic approach to its cultivation.

Winemaking

The vineyards, located on chalk soils characteristic of the region, give the wine its distinctive mineral character. The blend of vintages includes 55% perpetual reserve wine, which adds complexity to the blend. Ageing takes place partly in small oak barrels and stainless steel vats, followed by an extended rest of 7 years on the lees, allowing the wine to develop a refined structure and complex aromas.
Taste
On the palate, Pascal Doquet Diapason stands out for its minerality and freshness, balanced by a lively acidity that brings a vibrant character. The predominant aromas include notes of white flowers such as hawthorn, and fruits such as green apple and citrus. These elements are complemented by a long and harmonious persistence, making it an ideal champagne to accompany raw fish dishes such as sushi or fresh seafood.
