Pascal Doquet Champs Libres Blanc de Blancs is made by Pascal Doquet, a producer in the Côte des Blancs region of Champagne, France. Doquet has been a reference in the region since 1982, when he took over the family vineyard with his wife and sisters. This wine is composed of 100% Chardonnay, a grape variety grown in clay-limestone soils. The vineyard has been certified organic since 2007, reflecting the winery's commitment to sustainable and environmentally friendly practices.

Winemaking

The winemaking process of Pascal Doquet Champs Libres stands out for its focus on terroir purity. Fermentation is carried out with indigenous yeasts in stainless steel tanks, without filtration or fining, and with a light use of sulphur dioxide. The wine is dosed with only 3 grams per litre of residual sugar, which classifies it as an extra brut. Ageing is 36 months on the lees, which contributes to the wine's complexity and texture. The result is a Champagne that balances freshness, minerality and depth, with a marked expression of its terroir.
