Description

There is something deeply moving about touring vineyards that have been standing for more than a century. In Nieva, a small town in the province of Segovia, pre-phylloxera Verdejo vines survive, defying time with wise serenity. From these vineyards, born in sandy soils at an altitude of over 900 metres above sea level, where phylloxera could not make a dent, Ossian Verdling Dulce is born, a wine that does not respond to fashions or commercial demands, but to the desire to capture the purest essence of a singular terroir.

The Ossian winery, driven by the vision of making great white wines from old, organic Verdejo, has spent years perfecting a sweet interpretation that departs from the usual canons. The idea came from a particularly fresh harvest, which naturally preserved a vibrant acidity. What was initially almost an experiment turned out to be a deeply personal wine. Ossian Verdling Dulce is all about subtlety, patience and respect for the grape.

Winemaking

The grapes are harvested by hand in small crates to protect the integrity of the fruit. The grapes are harvested early, seeking to preserve the crucial acidity that balances the final sweetness. Once in the winery, Ossian Verdling Dulce ferments the must at low temperature with indigenous yeasts, and stops the process by cooling before the sugars are completely consumed. There are no additives or corrections. This method, which evokes the German tradition of sweet Riesling, finds a radically different personality here: drier on the nose, denser on the palate, more mineral. All thanks to the expressive power of an ancestral Verdejo and a viticulture that dispenses with chemicals.

Taste

Surprising from the first sip: Ossian Verdling Dulce is not a "dessert" wine as many expect. Its sweetness is restrained, balanced by a fresh acidity that makes it vibrant and very gastronomic. Notes of white fruit, lemon peel, floral hints and a slightly balsamic background make it a delicious and prolonged experience. A wine that seduces without being cloying, that invites another sip, and that redefines what a sweet white wine of the highest quality can be.
