Description
Ollos de Roque is a white wine made with native Treixadura, Lado and Agudelo grapes from vineyards that are certified organic and biodynamic.
The different grape varieties used to make this wine are the result of vines planted more than 11 years ago, using decomposed granite soils for their cultivation.
It is a young wine with very little aroma, but its flavour is capable of conveying the history of the terroir where the fruit was grown.
Elaboration
Ollos de Roque is a white wine made using techniques and processes that minimise the intervention of the human hand, or any chemical element that could alter the final flavour of the wine.
The harvesting process is carried out manually, as the objective is to find the grape's crispness. Then, the fruit is directly pressed to extract the must, and then fermented with the winery's own yeasts.
The ageing phase takes place in 840 and 330-litre barrels, a 500-litre cask and a 400-litre vat for a period of 10 months. No oenological additives are added, except for a small amount of sulphur dioxide before bottling.
Taste
The Ollos de Roque wine is a white wine with a very accentuated mineral taste, which leaves a long permanence in the mouth with a high level of acidity and low alcohol.
