Description
Luis Pérez La Barajuela Cortado is a unique expression of Spanish viticulture and oenology. This wine is made from 100% Palomino Fino grapes, an indigenous variety of great prestige in the region. Sourced from the 50 year old vineyard, this wine reflects the quality and tradition of its terroir.
Winemaking
The grapes are harvested continuously for almost two months, carefully selecting the clusters for different types of wines. For this Cortado, the grapes are harvested in mid-August, with somewhat late harvesting. The grapes are lightly pressed and fermentation takes place in barrel. Afterwards, the wine is racked and returned to the barrel, where it remains for at least a year before being definitively classified as Cortado.
The ageing of Luis Pérez La Barajuela Cortado is equally special. The cask is filled to tocadedo and remains so until bottling. This process contributes to its subtle and elegant profile, while maintaining a structure that highlights its more elemental character.
Taste
Luis Pérez La Barajuela Cortado is complex and refined. It is characterised by the fact that it does not show alcohol either in the mouth or on the nose, which makes it exceptionally delicate and easy to taste. This wine has a slight sweet glyceric background, resulting from the evaporation of water and alcohol, which adds an extra dimension to its profile. Despite its complexity, it maintains a finesse and balance that make it very approachable. The marked acidity contributes to its extra complexity, making this wine a unique experience that, according to experts, deserves to be tasted at least once in a lifetime.
