The NV La Bota de Fino 91 Macharnudo Alto is a wine that has been bottled multiple times under the numbers 2, 7, 15, 18, 27, 35, 54 and 68 from the Fino Inocente solera of Valdespino. The bottled wine averages an age of ten years, a full-bodied Fino (if that's possible after ten years of flor!), fermented in old sherry casks like it was done yesteryear. They had not bottled this wine for almost three years. The nose is spectacular and easy to identify; it has the same character as the Inocente wines. The nose was singing and expressive, with typical aromas but also somehow floral and perfumed. It has volume with lots of autolysis from the lees, with great power but also finesse and balance. Stunning. 5,000 bottles produced.

Description
On the white slopes of the Macharnudo Alto estate -one of the most mythical and elevated plots in the Marco de Jerez- La Bota de Fino 91 is born, a wine that can only be understood as an act of resistance. Resistance to oblivion, to standardisation, to fear of the passing of time. Equipo Navazos, tireless seekers of forgotten treasures, returns to this solera to offer us a new saca -the ninth of this set of butts- where age does not weigh, but elevates.
The Bota de Fino 91 comes from a selection of butts from the solera, first and second criaderas, with an average ageing of approximately ten years. Its origin is 100% Palomino Fino, cultivated on pure albarizas -white soils, poor in organic matter but rich in history-, where the wine grows more than the vine. A land that, together with the west wind and a prolonged biological ageing process, moulds a profile that verges on the mystical. In this edition, priority was given to freshness and tension, without renouncing the complexity and unctuousness typical of a long fino, where the flower begins to give up its throne.
Winemaking
Vinification follows the canons of traditional Jerez: fermentation in steel, fortified with wine alcohol and aged in old American oak casks using the dynamic system of criaderas and solera. What sets this saca apart is the subtle decadence of the velo de flor: a natural, unforced process that allows yeast autolysis to add creamy texture and depth. Bota de Fino 91 has been bottled almost on the vine, with minimal filtering that respects its natural golden colour, structure and saline character. It is a fino that verges on the margins, flirting with oxidation without giving in to it.
Taste
La Bota de Fino 91 displays a vibrant complexity on the nose: raw almond, chalk, bakery, dried lemon peel, dried camomile and an unmistakable hint of sea salt. The palate is dry, oily, almost tactile. It enters with saline tension, expands with buttery volume - the result of autolysis - and finishes with an elegant bitterness of toasted hazelnut and apricot. It is persistent, long, with a hidden acidity that keeps it lively, firm and structured.
La Bota de Fino 91 is a wine for connoisseurs, without concessions. Serve between 9 and 13 °C, depending on whether you are looking for lightness or complexity. Ideal with Iberian ham, octopus a feira, seafood stews or cured cheeses. It can also be enjoyed on its own, where its character speaks clearly.
