The NV La Colline Inspirée Extra Brut is a 100% Chardonnay based on the vintages 2011 (65%, eight months in barrels on the full lees), 2010 (20 months in barrels on full lees) and 2009 (32 months on full lees) that were blended only one day before the bottling without any addition of sulfur. The wine was disgorged without dosage in November 2014 and offers a clear and fresh, very pure and mineral bouquet with lemon flavors. There seems to be a sea breeze in this Champagne that brings the flavors of oysters and lemons onto the nose. Full-bodied and very complex on the palate, this is a serious and vinous, firmly structured Champagne of great elegance and expression. Its acidity is very well integrated into the mineral body and the 'inspired hill' is still closed but has a great future ahead.

In the limestone hills of Montgueux, where the heavy clay soil blends with the vagaries of the continental climate of the Aube, Emmanuel Lassaigne decided to pay tribute to intuition and patience. Son of Jacques Lassaigne, he inherited not only a handful of hectares of old vines - some of them more than 40 years old - but also a philosophy: to intervene as little as possible, but to observe everything. Jacques Lassaigne La Colline Inspirée was born precisely from this contemplative spirit, as a leisurely reading of terroir and time. When others decided to go for steel and immediate aromatic purity, Emmanuel did the unthinkable: to age his wine entirely in old barrels, without fear of the slight oxidative halo, without fear of deviating from the expected profile of Champagne. In a region dominated by steel and precision, this was a profoundly radical decision.
Composed exclusively of Chardonnay grown under the Guyot method, with moderate yields (60 hl/ha) and no technological make-up, this wine embodies an almost Burgundian interpretation of Champagne. No dosage, no artifice, but with a generous structure that defies expectations.
Winemaking
Jacques Lassaigne La Colline Inspirée is vinified and aged entirely in old barrels, without adding any sweet woody notes, but giving the wine an enveloping texture and a subtle oxidative evolution. This method, rare in Champagne, allows the Chardonnay to express itself with depth, nuance and maturity. Fermentation takes place spontaneously with indigenous yeasts and without the addition of sulphur during vinification. After several months on the lees, the wine is bottled without fining or filtering, preserving as much of its pure character as possible.
Taste
The first impression on the nose of Jacques Lassaigne La Colline Inspirée is sensual, like an early morning bakery: freshly baked brioche, hazelnut butter, a touch of still-warm sourdough. As it breathes, notes of baked apple, candied citrus peel and a hint of wilted blossom appear. On the palate, Jacques Lassaigne La Colline Inspirée reveals itself to be opulent yet precise : the texture is creamy, almost milky, with a vibrant acidity that cuts through the centre, like a mineral scalpel. The finish is lingering, saline, reminiscent of toasted nuts and a slight noble bitterness that invites the next sip. This is not a Champagne for those seeking simple effervescence; it is a declaration of principles. And of place.
