Description

Domaine Corinne et Jean-Pierre Grossot is a resounding name in the heart of Chablis, a region renowned worldwide for its white Chardonnay wines. Located in the commune of La Chapelle Vaupelteigne, the winery stands out for its artisanal and meticulous approach to viticulture. The Fourchaume plot, an exceptional 1er Cru, benefits from a western exposure on gentle slopes totalling 0.75 hectares. This unique terroir, composed of Kimmeridgian soils with a mixture of clay and calcareous marl, gives the wine a unique and persistent mineral structure. The vines planted in 1988 and 1996 are tended under sustainable practices, respecting both tradition and modernity in the winemaking process.

Winemaking

The vinification of Grossot Chablis 1er Cru Fourchaume is carried out with precision to bring out the purity of the fruit and the influence of the terroir. After a manual harvest, the grapes undergo controlled fermentation in stainless steel tanks, thus preserving their freshness and aromatic profile. Subsequently, the wine is aged on fine lees, bringing a subtle creaminess and complexity to the palate, without the interference of the barrel, which accentuates its genuine character.

Taste

Grossot Chablis 1er Cru Fourchaume is an ode to balance and elegance. On the nose, it displays a palette of citrus aromas such as ripe lemon and grapefruit, along with notes of white fruit such as apple and subtle hints of peach. On tasting, the first impression is one of vibrant freshness, with high acidity supporting a medium body and creamy texture. The finish is lingering and highlights a minerality that evokes the essence of chalky soil, providing a signature that lingers. This wine not only captures the expression of a singular vineyard, but invites a sensory experience with every sip, making it ideal for special moments as well as for pairing with seafood and fish.
