Description

In the heart of Burgundy, Frédéric Cossard cultivates his own vision of wine: no dogmas, no masks, just grapes, soil and time. Coming from the wine trade, he took a radical turn in the 1990s when he became a producer, embracing biodynamic farming and minimal intervention as guiding principles. Bigotes - a play on words that alludes to both devout faith and a family name - is born of this philosophy of uncompromising purity.

Frédéric Cossard Bigotes Bourgogne Chardonnay is made from grapes from vines over 40 years old, planted on clay-limestone soils around Puligny, Volnay and Pommard. With limited yields (25 hL/ha), each cluster is a concentrated expression of the Burgundian terroir.

Winemaking

The grapes for Frédéric Cossard Bigotes Bourgogne Chardonnay are directly pressed and fermented spontaneously with wild yeasts for 8 months. Ageing takes place in egg-shaped cement tanks (17 hL), whose geometry favours the natural movement of the lees, providing texture without mechanical agitation. After 11 months in cement, the wine rests for a further 4 months in stainless steel before bottling.

Taste

Bright, light lemon yellow colour. On the nose, Frédéric Cossard Bigotes Bourgogne Chardonnay displays clean notes of yellow apple, quince and white flowers such as honeysuckle. With air, nuances of fresh pear and a marked mineral background emerge. On the palate, it is direct, saline, with precise acidity and smooth texture. Its profile is clear, with a chalky minerality that structures the palate. Long, clean finish, with echoes of white fruit and chalk. An essential Chardonnay, free and unadorned.
