The domaine, with 12 hectares spread across the illustrious villages of the Côte de Beaune, cultivates its more modest wines and its most ambitious labels with the same high standards. This white wine is made from 100%Chardonnay within the Bourgogne Côte d’Or AOC, in an area where Burgundian tradition, limestone soils and the pursuit of finesse define the wine’s character.
Production
The grapes for Fabien Coche’s Bourgogne Côte d’Or Chardonnay come from high-density vineyards, with the grapes harvested by hand to preserve their integrity from the very start. The ageing process combines 500-litre barrels and large wooden vats, with a very measured use of new oak. The intention is clear: to impart volume and complexity, whilst not masking the varietal purity. Thus, this Burgundy white wine is built upon tension, aromatic clarity and a precise texture, relying more on energy than on artifice.
Taste
In the glass, Fabien Coche Bourgogne Côte D’Or Chardonnay offers the profile of a Burgundy Chardonnay that seeks to impress not through excess, but through balance. The nose opens with citrus, lemon zest and fresh white fruit, with a slightly buttery undertone and a very subtle hint of vanilla. Nothing feels heavy or over-the-top.
