Description
Domaine de la Pinte is a winery located in the Jura region of France that specialises in the production of organic and biodynamic wines. The Cuvée d'Automne is one of the winery's most renowned labels and is made from Savagnin and Chardonnay grapes, a variety indigenous to the region.
Winemaking
This wine is made using the traditional white wine-making method. On arrival at the winery, the grapes are pressed and the must is cleaned by decanting, which allows the fermentation to take place cleanly.
It is then fermented with indigenous yeasts in temperature-controlled vats. It then undergoes malolactic fermentation. Finally, the wine is aged for 4 years in barrels or foudres.
Only part of the Savagnin is aged under a yeast veil, known as biological ageing, the rest is aged in the traditional way in barrels, known as oxidative ageing.
Taste
Arbois La Cuvee d'Automne is a white wine with an aromatic complexity that concentrates on fresh, dried and candied fruits. The palate is silky and evolves with good balance. On the finish it is a little acidic which makes it fresh and very pleasant.
