Description
In the heart of the Côte Chalonnaise, in the discreet and charming commune of Rully, the de Villaine family - yes, the same as Aubert de Villaine, co-manager of the legendary Domaine de la Romanée-Conti - has been calling for a quieter, more austere Burgundy true to the land for years. The " Les Saint-Jacques " plot, just 1.7 hectares in size, planted just over 17 years ago on clay-limestone and loam soils, embodies this vision: to express the soul of Chardonnay without frills, without artifice, with a precision that only comes from patience and trust in the vineyard.
In one of the first vintages, when yields were low and the youth of the vines made some people doubt, Aubert decided to go ahead with the vinification. "Let the vines speak, even if their words are still being formed", he said at the time. A decision that defines the character of the wine: authentic, subtle, in no hurry to impress.
Winemaking
Each parcel used to make Domaine De Villaine Rully Les Saint-Jacques is vinified separately, starting with a gentle pressing in a pneumatic press. The must is then transferred to stainless steel tanks for a cold maceration of 24 to 36 hours, preserving its aromatic clarity. Fermentation and ageing take place mainly in large wooden vats (80%) and barrels (20%), with minimal intervention: only the temperature is controlled between 20 and 22 °C and bâtonnage is avoided except in the case of reduction. The wine remains in contact with its lees for 10 to 12 months, depending on the vintage, before bottling.
Taste
Domaine De Villaine Rully Les Saint-Jacques offers a refined interpretation of the varietal. On the nose, notes of ripe lemon, white pear, dried flowers and a touch of fresh butter intertwine with a clear, almost stony minerality. The palate is precise and vibrant: citrus entry, saline core, taut but delicate texture. The acidity is perfectly integrated, providing structure without harshness. Long finish, with echoes of raw almond, pink grapefruit and wet stone. This is a restrained wine that prefers to hint rather than show off. For palates that seek truth and transparency rather than spectacle.
