Winemaking
The winemaking of this wine is a testament to dedication and artistry. The grapes are harvested by hand, ensuring that only the best bunches are selected. Once harvested, they are destemmed and crushed by foot, a traditional method that respects the integrity of the fruit and extracts its juices naturally. Fermentation is carried out in large vats, using indigenous yeasts, which allows the wine to develop a genuine and authentic character. During this process, no racking takes place, which means that the wine retains its pure, unadulterated essence. The wine is aged for a year in 500 to 1,500 litre oak vats, which gives the wine an unparalleled complexity and structure. Finally, it is bottled without fining or filtering and without the addition of sulphur, preserving its natural and authentic character.
