Chevreux-Bournazel La Parcelle La Capella is a champagne from the dedication and passion of winemakers Stéphanie Chevreux and Julien Bournazel.
Winemaking
Chevreux-Bournazel La Parcelle La Capella is made with a focus on biodynamic practices, deeply respecting the terroir and the environment. The grapes used are 100% Pinot Meunier, a variety that brings a unique richness and complexity to the wine. Harvesting is done by hand in the cool morning hours, ensuring the integrity and freshness of the grapes. Fermentation occurs spontaneously in used oak barrels, following a natural approach and minimising intervention. This process is complemented by an ageing of 10 months in used oak barrels, which contributes to the complexity and depth of the wine. In addition, a low level of SO2 (between 12-37 mg/L) is maintained, with only a small amount added before bottling to stabilise the wine.
