Description

A faint morning mist drifts over the centuries-old vineyards of Les Lumachelles, on the outskirts of Mouchard, north of Arbois, where the limestone soils and greyish marl, full of fossils, support the roots of Etienne Thiébaud 's audacious project. It was in 2007, at the age of just 22, that Etienne planted the seed of Domaine des Cavarodes : a daring bid to rescue ancestral Jura varieties and bring them back to life with organic, respectful, chemical-free agriculture, making his pruning and harvesting calendars according to the moon and enshrining the land as his living spirit. Les Lumachelles was born as a declaration of faith: a pure Poulsard, a slow and humble homage to the earth, where every drop is a landscape and every aroma a memory of the mineral. The story goes that, in a difficult vintage, Etienne decided to harvest almost without extraction, walking stealthily among old vines, convinced that less is more. This bold decision defined the character of the wine: delicate, transparent, unrepeatable.

Winemaking

Each cluster that gives life to Cavarodes Côtes du Jura Poulsard Les Lumachelles is picked by hand, respecting the moon and the right ripeness. An almost ethereal maceration on whole grapes: spontaneous fermentation in open vats, with indigenous yeasts and minimal extraction. No sulphur is added during ageing, which takes place in old neutral barrels or inert tanks, for a short but sufficient time to allow the wine to rest without losing its purity. It is bottled without fining or filtering, with a very low or even zero sulphite content.

Taste

In the glass, the Cavarodes Côtes du Jura Poulsard Les Lumachelles is a clear, almost ruby red, with a transparency that invites you to look through it carefully. The bouquet unfolds like a subtle dance: small, tangy red fruits, wild strawberries, pomegranate, and a delicate floral nuance brushed by the breeze, along with a subtly vegetal and spicy touch. The palate is fluid and sapid, airy in texture, with vibrant fruit and a light structure, barely a hint of tannin, while a chiselled acidity stretches it elegantly. The purity is almost transparent, crystalline, with a long finish that leaves salinity and freshness, like a mineral sigh that lingers on the palate.
