Disgorged in April 2021, the latest rendition of Paillard's NV Extra-Brut Blanc de Blancs Grand Cru is charming and expressive out of the gates, bursting with aromas of white peach, pear, fresh pastry and white flowers. Medium to full-bodied, pillowy and enveloping, it's a fleshy, open wine, with bright acids and a pretty pinpoint mousse, concluding with an elegantly chalky finish.

Description

Bruno Paillard Blanc de Blancs Grand Cru is an oenological jewel that stands out for its purity and precision. This champagne is characterised by its tense citrus fruit, in particular lemony notes, accompanied by a slightly chalky nuance and a subtle crystalline toasted edge. Its intensity is simply astonishing.

Winemaking

Made exclusively from the Chardonnay grape variety, this wine was once nicknamed the "lace" of Champagne because of its fine, persistent white mousse. It comes from a premium Chardonnay pressing, sourced exclusively from Grands Crus vineyards on the Côte des Blancs. The Blanc de Blancs Grand Cru is composed of reserve wines from 25 vintages, dating back to 1985. A very old vinification method is used, where the fermentation in the bottle is less tumultuous than in traditional Champagne. It is aged for four years on fine lees, followed by an additional ten months of ageing after disgorgement. As with all Champagnes from this house, the dosage is very low, classifying it as Extra-Brut (5 g/l).

Taste

Very pale and bright with green tints. The effervescence is lighter than in other champagnes, thanks to a slower fermentation in the bottle. On the nose, the first aromas are citrus, such as lime and grapefruit, followed by white flowers. As it opens in the glass, a touch of almond and toast appears. On the palate, after a lively attack, this wine reveals complex notes ranging from citrus to white-fleshed fruits, marked by the distinctive minerality of chalk. The finish is fresh and persistent.
This champagne pairs wonderfully with seafood, especially oysters. It can also accompany fish or a full meal, as long as there are no particularly spicy or sweet dishes.
