Disgorged in April 2021, the latest rendition of Paillard's NV Extra-Brut Rosé Première Cuvée offers up attractive aromas of crisp stone fruits, red berries and hints of warm biscuits. Medium to full-bodied, seamless and pillowy, it's an ample, elegant Champagne that's fine-boned and precise. I suspect it will show even better with another year or two on cork.

Bruno Paillard Première Cuvée Extra Brut Rosé is known for its delicacy and elegance. A true representation of the mastery of winemaking in the world of champagne, it stands out for its purity, elegance and unparalleled flavour.

Winemaking

Rosé Première Cuvée is made exclusively from the first pressing, considered the purest and best quality. It is Bruno Paillard's only rosé, but represents 12% of his total sales. The Pinot Noir grapes are specifically selected from the villages of Mailly, Verzenay, Bouzy and Le Riceys, making up 85% of this composition. A small addition of Chardonnay lends elegance and freshness, balancing the fruity flavour of the Pinot Noir. The low dosage is a distinctive feature of the Maison. After disgorgement, the bottle rests for at least 6 months before reaching the market, an ideal time according to the Maison to recover from the oxidative stress due to the disgorgement.

Taste

The colour is a coppery pink with a hint of raspberry when young, evolving to salmon with age. The fine bubbles are the result of a strict selection of the best grapes and perfect temperature control in the cellar, as well as very long ageing. On the nose, the initial aromas of redcurrant and red fruits evolve into black cherry, wild strawberry and violet as it aerates in the glass. A hint of lemon denotes the discreet presence of chardonnay. With age, the aromas tend towards dark fruits such as black cherry, fig and blackberry. On the palate, it reveals red fruits captured at their freshest. The finish is bright and lingering. It is an ideal champagne to accompany fine Italian charcuterie, sushi, poultry or red fruit salad.
