Matured for one year in barrels and for one year in tanks, the 2021 Chinon Le Clos Guillot expresses a slightly animal, somber bouquet of dark wild berries, licorice, cherries and violet. Medium to full-bodied, chiseled and layered, it’s austere and firm with carnal notes on the finish.

Description
Bernard Baudry Chinon Le Clos Guillot is a refined red wine made exclusively from Cabernet Franc. The vines, planted between 1993 and 2000, are located on limestone soils with a south-southwest exposure.
Winemaking
The vinification of this wine includes a manual harvest, a two-week fermentation in cement or oak vats, followed by an ageing of twelve months in 2 to 5 year old oak barrels and an additional nine months in unlined cement vats. Bottling takes place in September, two years after the harvest, and is not filtered.
Taste
Bernard Baudry Chinon Le Clos Guillot stands out for its aromas of sour cherries and black fruits, being able to show Pinot Noir-like characteristics. This wine shows remarkable length and freshness, with a bouquet that includes slightly animal and dark notes of wild berries, liquorice, cherries and violets. On the palate, it is medium to full-bodied, with a firm and austere structure, revealing fleshy notes on the finish. It can be enjoyed after two years in bottle and has a cellaring potential of 10 to 15 years.
