Winemaking
The elaboration of Anaïs Fanti Azar Azar follows an experimental winemaking process, using the carbonic maceration technique of Pinot Auxerrois passed through Marc de Pinot Noir. This method contributes to the aromatic intensity and freshness of the wine. Ageing for 8 months in stainless steel tanks on fine lees is crucial to develop its flavour and texture profile. The vineyards, located in the Ban d'Ammerschwihr, benefit from alluvial and sandy-stony soils, derived from the decomposition of granite, bringing a distinctive minerality to the wine.
